Chef Andrea Genio’s recommended menu is Insalata di Polipo,’ the refreshing salad which features fresh, local Octopus cooked sous vide (vacuum) with beautiful Thai flower ‘Anchan’ – Butterfly pea flower for 8 hours and served with green bean, potato, black olives, lemon segments, Pesto sauce and semi dried cherry tomatoes;

Appetizer: Gamberoni Fritti – Deep-fried Sarasin prawn with roasted capsicum, cucumber and baby lettuce with Bagna Cauda sauce. The Sarasin Prawns were supplied to the hotel by the Sea Gypsy ‘Mogren’ – As part of Marriott’s global commitment to sustainability and environmental ecosystem programme. The resort together with IUCN have participated and developed the sources of sustainable seafood and worked with the nearby communities on its CSR projects. The highlight of this dish is the ‘Bagna Cauda sauce which is a traditional dip from Piedmont region, Northwest of Italy.

Sharing platter: Vitello Tonnato – Layers of raw tuna and veal served with capers, anchovies, egg emulsion and potato chips. Chef Andrea shared with us on the method of this dish that  It takes quite sometimes for its preparation, the Tuna sous vide (vacuum) for 4 hours then, mixed with secret spices and herbs and cream sauce made from Tuna, anchovies and egg etc. It’s thumb up for this dish definitely.

Main: Cannelloni al Baccala e Cipolle Rosse – Oven-baked Cannelloni pasta stuffed with creamed Baccala on tomato coulis and salt crusted red onion. The filling Baccala made from salted cod-fish with soaked up in the running water 24 hours, then ‘Mantecato – creamed’ and roll up into the tub.

Main: Guancia di Manzo al Vino Bianco e Mele – White wine and apple braised beef cheek on black truffle risotto with apple chips. The beef cheek slow-cooked at least for 6 hours simmered fire with apple and white wine and it simply scoop it up with the spoon.

Dessert: Torta Mimosa – Traditional Mimosa cake with lemon custard and peach jam. This dessert is inspired by Mimosa flower. In Italy, It’s the flower that Italians give to the women on the International Women’s Day.

Save some rooms for another standout dessert such as the Black Truffle, Grappa or Tiramisu ice creams.  The Cucina restaurant opens for lunch from 12.30 pm – 3 pm and dinner starts from 6 – 11 pm.
