Sanpellegrino presents exciting menu from Eat Me star Tim Butler at W Koh Samui on 19-20 May

 

Bangkok: Sanpellegrino, the ambassador of fine dining, will present Tim Butler, executive chef and part owner of Bangkok’s acclaimed Eat Me restaurant for a six-course beach dinner at W Koh Samui on 19 and 20 May.

 

May 20 will additionally feature a fashion show debut of Alix bodysuit from New York City at the resort’s Woobar, starting from 5:30 pm, with music entertainment including a DJ. A mixologist will be preparing four signature Diplomatico rum cocktails throughout the two evenings.

 

The price per person is THB 2,900++ for food only, and THB 4,100++ for the option in which carefully selected wines from Italy, France, Australia and Argentina are served with each course.

 

The event is part of the Fine Dining Lovers Guest Chef Series initiated by Sanpellegrino, designed to demonstrate how the finest natural mineral water can be used to enhance the greatest of dining experiences. This series brings renowned chefs to Thailand from top dining destinations around the world, and also showcases top chefs from Thailand’s own creative restaurant scene.

 

Born in Portland, Maine, Chef Tim Butler lived in New York City and Southern California before moving to Bangkok in 2009 and joining Eat Me in 2010 as executive chef, where he evolved the cuisine into the modern, Asian-influenced, international food that has won the restaurant many awards.

Eat Me has been rated on Asia’s 50 Best Restaurants listing every year since 2013, occupying the 31 position in 2017.

 

Chef Tim is also involved with Bangkok’s much-lauded Bunker restaurant, and just recently has opened Esenzi, at Iniala Beach House in Phuket.

 

Tim’s fixed menu at W Koh Samui starts with a sake granite with sea urchin, yuzu and scallop, and moves on to a hamachi crudo, the Italian version of sashimi, followed by a course of charred squid with chorizo and capsicum. A course of Omi Beef, the oldest Japanese beef brand, which comes from a fine breed of Wagyu cattle known as Japanese Black, is presented seared by Tim in tataki style. This is followed by a course of smoked beef tongue with tripe and black garlic aioli, and finally by a dessert of hazelnut and chocolate.

 

Eat Me opened almost 20 years ago in Bangkok and occupies a prime position at the forefront of the Bangkok dining scene. Tim uses the best produce sourced from around the world to create well-balanced dishes where the natural flavours are the main feature.

 

The restaurant is set in a mid 20th century town house which was redesigned by Kelly Wheatley, and offers indoor dining on the upper two floors and outdoors dining on the second floor balcony. The multiple spaces and levels are modern and decorated with rotating art exhibitions from H Gallery.
